Tipsy Taco Tuesday #32 – Carnitas at Home

AT HOME EDITION – Corona Virus Style #32

I hope everybody is practicing smart social distancing themselves. I know this weekend was a celebration of the religious Saint Patrick, but holy hell did I see a ton of my followers out at bars getting hammered. Did you know Saint Patrick was a fifth century bishop in Ireland? He also was kidnapped by pirates as a teenager. Everybody wants to Netflix and Chill, and once we get a quarantines, everybody seems to want to go out and get hammered? Wild move, but hopefully it won’t have any sort of effect like in Italy

Just go out and play tennis or something. Any-who, you came here for tacos, not for my opinion on the virus. I did an in house option due to the fact that most restaurants are closing at this time until further notice. I will continue to do this, and don’t you worry, the winks will continue! Dare I say, let’s dive in!


Taco Review Time:

One of my best friends girlfriend cooked for us. He had told me his girlfriend makes amazing carnitas. Needless to say, my buddy Matt, camera man Jeff and myself drove to Nick and Autumns to test these out!

Carnitas – pico de gallo, with white onion, jalapeno and roma tomate, along with the sauce that included ¼ cup mayo, ¼ cup crema, cilantro, lime juice, cotija cheese, salt, pepper, pepper, cayenne, 2 cloves of garlic and steamed corn. I bit in and this was delicious. If you have never had street corn; I don’t know if it is supposed to go on a taco, but holy hell, throw it on there. The pork shoulder, combined with the pico and the fire of the jalapeno made this taco jump out. This one did not reach the 9 category, but it did save my life hungover the next morning after going out with the fellas. 8.7/10 Autumn knows her way around a kitchen. Nicholas J. Squirrel, not so much!

Tipsy Review Time:

UFO – Pink Lemonade – This beer had been sitting around for ages and had to crack it open for a taste. I’d say this is a downgrade of a Leinenkugel Summer Shandy. It was a little more bitter and less flavorful. I also think you would get sick of drinking these after 2-3, but as just a one beer type of thing, something that I probably would not buy for myself, but would drink if it was around. 5.6/10.

Autumns carnitas recipe absolutely gets the Tipsy Taco Tuesday stamp of approval! The Carnitas are either a pork shoulder or pork butt skiness and boneless salt, pepper, onion, garlic, an orange, jalapeno, dried oregano and ground cumin. Just like going out to bars during this pandemic, say no to hardshells. #nohardshells
